Carol Annette Eakin Ervin

November 3, 1942 - March 17, 2025

Carol Annette Eakin Ervin was born on November 3, 1942 in Cleveland, OH and died March 17, 2025 in Harrisonburg, VA. Carol was the youngest of two children born to the late Dollie Locke and Ralph Eakin.

Her family lived in Painesville, OH for a short while before moving to Cambridge Springs, PA as a toddler and would make that her home for the next 20 years. She graduated from Cambridge Springs High School in 1960. After graduation, Carol started working in a local bank in Cambridge Springs where she gained bookkeeping skills that she would continue to use her entire life.

On July 17, 1965, Carol married Joseph Lee Ervin of Teepleville, Pennsylvania. They moved to Lombard, IL soon after marriage for Joseph to attend chiropractic college. They lived in Lombard from 1965 to 1968 and their first son Joe was born in 1967 while living there. While in Lombard, Carol worked in banking and was also a waitress at Henrici's of Chicago, which at that time was one of the finest white tablecloth restaurants in the Chicago Area. They moved to Harrisonburg, VA in 1969 to start their chiropractic practice. David, their second son, was born in 1970.

Carol and Joseph made Harrisonburg their forever home, serving the community. They opened and ran two successful businesses for many decades, the Chiropractic Center and Valley Nutrition Center. Valley Nutrition Center was Carol's business and was the only natural product and vitamin resource in the valley for close to 3 decades. Carol was a member of Asbury United Methodist Church for over 50 years. She was an avid quilter and was part of the Shenandoah Valley Quilt Guild.

They were married for 59 years and were blessed with sons Joseph (Joe) Lee Ervin, Jr. and David Matthew Ervin and four wonderful grandchildren. She was everything you could ask for as a mother and grandmother: caring, loving, protective, encouraging, and supportive. Carol cherished time with family and especially the extended family beach trips. Carol could sit on the beach for hours and was always the last one to leave the beach. Time with her grandchildren often included baking. Her rhubarb, apple, pumpkin, and lemon meringue pies were legendary among friends and family.

Carol is survived by her husband Joseph, son Joe (Sandy) and children Lanie and Larson of Greenville, SC, and son David (Addy) and children Taylor and Joslyn of Virginia Beach, VA. She is predeceased by her parents; and her brother Dick Eakin and sister-in-law Evelyn Eakin.

A celebration of life service will be held at a later time.
